Bang Bang Chicken

Ingredients

  • 1/3 milk
  • 1 large egg
  • 1 lb. boneless skinless chicken breasts, cut into 1 ” cubes
  • 1/4 cup potato starch
  • 1/4 cup flour
  • 1/2 tsp salt
  • 1/4 tsp pepper
  • 1/4 tsp Hot Under The Kilt Acadian Cajun Seasoning
  • 2 cups oil for frying
  • 1/4 cup mayonaise
  • 2 tbsp honey
  • 2 tbsp sweet chili sauce
  • 1 tsp sriracha sauce

Instructions

  1. Whisk together the milk and egg in a large bowl, add the chicken, toss to coat, let sit 30 minutes, drain and discard mixture.
  2. Combine potato starch, flour, and spices, pour into a resealable bag, add the chicken and shake until chicken is evenly coated.
  3. Heat the oil to 325, add the chicken in small batches and cook for 1 -2 minutes, remove to a paper towel lined plate, continue until all of the chicken is cooked.
  4. Mix together the mayo, honey, sweet chili and siracha, toss the chicken into the mixture and serve over steamed rice.
