Asian Style Wild Blueberry and Rock Crab Salad
This easy summer salad combines products from three of our favorite partners to create a “wow” dish with tons of fabulous flavor and fresh goodness! Thanks to The Wild Blueberry Growers of NS, Logan’s Daily Catch and of course Liquid Gold!

Asian Style Wild Blueberry and Rock Crab Salad

- 1 English style cucumber cut into “noodles”
- 1 carrot; julienned
- 2 green onions cut on the bias
- 1 cup fresh wild blueberries
- 1 lb rock crab meat
- 1/2 tbsp sesame seeds
Dressing
- 1 clove garlic, minced
- 1 tbsp fresh ginger, minced
- 1/4 tsp fresh cracked black pepper
- 1/2 cup rice wine vinegar
- 1 tbsp sesame oil
- 1 tbsp soy sauce
- 2 tbsp olive oil
- 1 tsp fish sauce
- 1/2 tbsp sesame seeds
- Pinch of red pepper flakes
Instructions
- Begin by combining of the dressing ingredients into a bowl and whisking to emulsify.
- In a large bowl combine the cucumber, carrot, green onion, wild blueberries, crab meat together and gently toss.
- Top with the dressing and the 1/2 tbsp of sesame seeds.
- Chill for 1/2 hour before serving. Toss again before serving.
