Asian Style Wild Blueberry and Rock Crab Salad

Dressing

  • 1 clove garlic, minced
  • 1 tbsp fresh ginger, minced
  • 1/4 tsp fresh cracked black pepper
  • 1/2 cup rice wine vinegar
  • 1 tbsp sesame oil
  • 1 tbsp soy sauce
  • 2 tbsp olive oil
  • 1 tsp fish sauce
  • 1/2 tbsp sesame seeds
  • Pinch of red pepper flakes

Instructions

  1. Begin by combining of the dressing ingredients into a bowl and whisking to emulsify.
  2. In a large bowl combine the cucumber, carrot, green onion, wild blueberries, crab meat  together and gently toss.
  3. Top with the dressing and the 1/2 tbsp of sesame seeds.
  4. Chill for 1/2 hour before serving. Toss again before serving.
