A chiard is really a quick traditional Acadian dish sometimes called a pot de Chiard, it loosely translates to a mess of food. But don’t be fooled this traditional dish is very good, It is often made from beef but depending of the area it is sometimes made with bologna, hot dogs, or just plain potatoes and onions.

Description

A chiard is really a quick traditional Acadian dish sometimes called a pot de Chiard, it loosely translates to a mess of food. But don’t be fooled this traditional dish is very good, It is often made from beef but depending of the area it is sometimes made with bologna, hot dogs, or just plain potatoes and onions.


Ingredients

Units Scale
  • 2 tbsp butter
  • 1 lb stewing beef in 1/4 inch cubes
  • 1 large onion, diced
  • 1/2 tsp Salt
  • 1/2 tsp freshly ground pepper
  • 6 to 8 potatoes peeled and sliced
  • 2 carrots diced
  • 4 cups beef broth or water
  • 1 tsp salted herb or 2 Tbsp Green onions, chopped
  • 1 tbsp chopped parsley

Instructions

  1. In a heavy bottom pot on high heat, melt butter then sauté the beef cubes, onions, salt and freshly ground pepper for 3 to 5 minutes or until the beef is brown on all sides.
  2. Add the broth ( or water ) cook and simmer until tender for approx. 1 hour.
  3. Add the potatoes and carrots and cover with broth if needed, add the salted herb, top with fresh parsley,.
  4. Bring to a boil, stir occasionally then simmer until the potatoes start to fall apart and there is very little water left.

 

 

Notes

Note: If substituting hot dogs or bologna for the beef, cook only for few minutes before adding the potato.
