Onion and Apple Pork Roast

This is one of my favorite ways to cook a pork roast on a cold winter’s day.  The house will smell incredible and, of course, the amazing onions from Country Magic Produce in the valley, local apples and local pork makes for an incredible flavor profile!

This roast pork with apples and onions combines the rustic flavors of fresh herbs with the sweetness of caramelized onion and apple in a one-pot meal that might just become your new favorite holiday dish.

Roast Pork with Onion and Apples

Description

This hearty, one-dish roast pork combines the savory flavors of herbs and pork with the sweetness of caramelized apples and onions.


Ingredients

Units Scale

5 yellow onions julienned
5 apple cored and cut into fourths
4 lb pork roast
2 tbsp “Some like it hot” mustard
2 tbsp steak spice
1 tsp dry thyme
1 tsp dry rosemary
2 bay leaf
1 1/2 cup red wine
1/2 cup chicken broth


Instructions

  1. Preheat oven to 350°F. 

  2. In a roasting pan place onion and apple. Add thyme, rosemary and bay leaf. Pour in the red wine and broth, place pork roast on top of the onions and apple; spread mustard over roast.

  3. Sprinkle with steak spice.

  4. Roast for 1½ hours.

  5. Remove roast from pan let rest for 10 minutes then slice.

  6. Meanwhile remove bay leaf from pan and stir the onion apple mixture together loosening any bits stuck to the bottom, place your pan over medium heat and let reduce.

  7. Mash the mixture and then serve compote with the sliced pork and you favorite sides.

Pairs perfectly with roasted rainbow carrots!
