Ingredients

  • 8 lasagna noodles
  • 1 lb ground beef
  • 2 tbsp olive oil
  • 3 small yellow onions ,diced
  • 3 garlic cloves, diced
  • 2 yellow peppers, diced
  • 1 Tbsp dried basil
  • 1 Tbsp dried oregano
  • 1 Tsp dried rosemary
  • 1 Tsp dried thyme
  • 1 Tsp dried fennel
  • 1 Tsp salt
  • 1 Tsp pepper
  • 2 Tbsp brown sugar
  • 1 28 oz can diced fire roasted tomatoes
  • 2 tbsp tomato paste
  • 6 cups beef broth
  • 1 cup shredded mozzarella
  • 1/2 cup shredded Parmesan
  • 6 oz ricotta cheese

Instructions

  1. Place the lasagna noodles in a casserole dish and cover with boiling water. Set aside
  2. Add the olive oil to a heavy bottom soup pot and heat until it begins to shimmer.
  3. Add the hamburger to the pot and scramble fry until brown.
  4. Add the garlic and cook for a few minutes longer, add the onions and yellow pepper; cook until they begin to soften.
  5. Add all of the seasoning and brown sugar; stir well.
  6. Add the tomatoes and the beef broth and bring to a boil, reduced to a simmer.
  7. Add the tomato paste and stir well.
  8. Remove the noodles from the water and cut into bite size portions, add to the soup and continue to cook until the noodles are soft.
  9. While you’re waiting for the soup to finish cooking place all three cheesed together in a bowl and mix well.
  10. Ladle the hot soup into bowls and top with a generous portion of the cheese.
