- 8 lasagna noodles
- 1 lb ground beef
- 2 tbsp olive oil
- 3 small yellow onions ,diced
- 3 garlic cloves, diced
- 2 yellow peppers, diced
- 1 Tbsp dried basil
- 1 Tbsp dried oregano
- 1 Tsp dried rosemary
- 1 Tsp dried thyme
- 1 Tsp dried fennel
- 1 Tsp salt
- 1 Tsp pepper
- 2 Tbsp brown sugar
- 1 28 oz can diced fire roasted tomatoes
- 2 tbsp tomato paste
- 6 cups beef broth
- 1 cup shredded mozzarella
- 1/2 cup shredded Parmesan
- 6 oz ricotta cheese
Instructions
- Place the lasagna noodles in a casserole dish and cover with boiling water. Set aside
- Add the olive oil to a heavy bottom soup pot and heat until it begins to shimmer.
- Add the hamburger to the pot and scramble fry until brown.
- Add the garlic and cook for a few minutes longer, add the onions and yellow pepper; cook until they begin to soften.
- Add all of the seasoning and brown sugar; stir well.
- Add the tomatoes and the beef broth and bring to a boil, reduced to a simmer.
- Add the tomato paste and stir well.
- Remove the noodles from the water and cut into bite size portions, add to the soup and continue to cook until the noodles are soft.
- While you’re waiting for the soup to finish cooking place all three cheesed together in a bowl and mix well.
- Ladle the hot soup into bowls and top with a generous portion of the cheese.
