Oui Chef Hamburger Soup

Ingredients

  • 1 1/2 lbs ground beef
  • 4 carrots, diced
  • 1 onion, diced
  • 3 celery stalks, diced
  • 4 potatos, peeled and diced
  • 1/2 cup barley
  • 2 Tbsp butter
  • 1 cloves garlic, minced
  • 1/2 Tbsp dried basil
  • 1 Tbsp dried oregano
  • 1/2 tsp dried thyme
  • 1 tsp salt
  • 8 cups beef broth
  • 2 Tbsp tomato paste
  • 2 can fire roasted tomatoes
  • 1 tsp hot sauce ** optional
  • Salt & Pepper to taste

Instructions

  1. Heat a large soup pot over medium-high heat, and crumble in the ground beef.
  2. Season with salt & pepper. Cook and stir until the beef is evenly browned and no longer pink. Remove beef from pot and set aside.
  3. To the same pot, add butter melt then add garlic. Stir in carrots, onions, celery and potato.
  4. Stir in basil, oregano, thyme, paprika & salt. Allow to caramelize for about 5 minutes.
  5. Add broth, cooked beef, tomatoes, tomato paste, hot sauce and barley and stir to combine.
  6. Bring to a boil, reduce heat and simmer for 1 hour.
