- 1 1/2 lbs ground beef
- 4 carrots, diced
- 1 onion, diced
- 3 celery stalks, diced
- 4 potatos, peeled and diced
- 1/2 cup barley
- 2 Tbsp butter
- 1 cloves garlic, minced
- 1/2 Tbsp dried basil
- 1 Tbsp dried oregano
- 1/2 tsp dried thyme
- 1 tsp salt
- 8 cups beef broth
- 2 Tbsp tomato paste
- 2 can fire roasted tomatoes
- 1 tsp hot sauce ** optional
- Salt & Pepper to taste
Instructions
- Heat a large soup pot over medium-high heat, and crumble in the ground beef.
- Season with salt & pepper. Cook and stir until the beef is evenly browned and no longer pink. Remove beef from pot and set aside.
- To the same pot, add butter melt then add garlic. Stir in carrots, onions, celery and potato.
- Stir in basil, oregano, thyme, paprika & salt. Allow to caramelize for about 5 minutes.
- Add broth, cooked beef, tomatoes, tomato paste, hot sauce and barley and stir to combine.
- Bring to a boil, reduce heat and simmer for 1 hour.
