A One-Pot Nova Scotia Supper That Still Makes Sense

There’s something grounding about a one-pot meal done right. Not flashy. Not trendy. Just the kind of supper that’s been feeding Nova Scotian families through long winters, tight budgets, and busy weeks for generations.

This chicken, vegetable, and potato pot is built on common sense. Affordable cuts. Local produce where possible. Frozen vegetables that keep costs predictable without sacrificing nutrition. Everything cooks together, which means nothing is wasted — flavour, time, or energy.

What makes this dish work isn’t technique, it’s restraint. Letting potatoes do the thickening. Letting milk soften the edges instead of drowning everything in cream. Letting the pot take its time instead of forcing it. It’s the kind of food that doesn’t need explaining once it hits the table.

And like most good Maritime cooking, it improves with patience. The next day, the flavours settle, the broth tightens naturally, and it somehow tastes like you worked harder than you did.

This is food meant to stretch. It feeds four comfortably, reheats well, and pairs with whatever bread happens to be on hand. Nothing fancy, nothing wasteful — just solid eating.

Cost Breakdown (Approximate)

Chicken: $6.00
Potatoes: $2.00
Carrots and onion: $1.25
Frozen vegetables: $2.00
Milk and fat used: $0.25

Total cost comes in around $11.50, working out to roughly $2.90 per serving.

That’s a full, balanced plate at a price that still makes sense — and a reminder that comfort food doesn’t have to be expensive to be good.

  • Yield: Serves 4

Ingredients

Units Scale
  • 2.2 lbs boneless chicken thighs or drumsticks (NS-raised if possible)
  • 3.3 lbs Nova Scotia potatoes, scrubbed and cut into chunks
  • 2-3 medium carrots, peeled and sliced
  • 1 large onion, diced
  • 1 cup frozen peas
  • 1 cup frozen corn
  • 2 Tbsp butter or rendered local fat
  • 1/2 cup whole milk
  • Sea salt and cracked pepper to taste
  • Fresh or dried thyme or parsley

Instructions

  1. Start by building the base. In a Dutch oven or heavy-bottomed pot, melt the butter over medium heat. Add the onion and cook until softened and translucent. This step matters more than people think — it’s where the depth starts.
  2. Add the chicken and lightly sear it on both sides. You’re not cooking it through, just building colour and flavour. Toss in the carrots and potatoes and stir to coat everything in the fat and onion.
  3. Pour in the milk, then add enough water or stock to just cover the potatoes. Bring it up to a gentle boil, then drop it to a steady simmer.
  4. After 10 to 15 minutes, stir in the peas and corn. Continue cooking another 10 to 15 minutes until the chicken is tender and the vegetables are soft.
  5. Finish by seasoning with salt, pepper, and herbs. Serve steaming hot, ideally with rustic bread or oatcakes if the budget allows.
