- 2 tablespoons olive oil
- 1 medium onion, finely chopped

- 1/4 cup fresh lemon juice
- 2 tablespoons fresh oregano, chopped
- 2 tablespoons fresh thyme, chopped
- 1/4 teaspoon crushed red pepper flakes (optional)
- 1/4 cup chopped fresh parsley
- Salt and pepper to taste
- Crusty bread for serving
Instructions
Prepare the Mussels:
- Rinse the mussels under cold water. Scrub the shells to remove any debris and debeard them by pulling off the fibrous “beard” that sticks out from the shell. Discard any mussels that are cracked or do not close when tapped.
- Cook the Aromatics:
- In a large, heavy-bottomed pot, heat the olive oil over medium heat.
- Add the chopped onion and cook until it becomes translucent, about 5 minutes.
