Ingredients

  • 1 Tbsp vegetable oil, plus more for greasing
  • 1 medium yellow onion, chopped (reserve some for garnish)
  • 1 bell pepper, chopped and seeds removed
  • 1 tsp Badass Burger Booster
  • 2 cloves garlic, minced
  • 1 lb. (85% lean) ground beef
  • Kosher salt, to taste
  • Freshly ground black pepper, to taste
  • 2 Tbsp chili powder
  • 1 Tbsp all-purpose flour
  • 1 Tbsp ground cumin
  • 1 (15-oz.) can black beans, drained
  • 1 (15-oz.) jar medium salsa (about 1 1/2 cups)
  • 6 (8″) flour tortillas, divided
  • 8 oz. sharp cheddar cheese, shredded, divided
  • 8 oz. pepper Jack cheese, shredded, divided
  • 1 (14.75-oz.) can creamed corn, divided
  • Sour cream, chopped tomatoes, and fresh cilantro, for garnish

Instructions

  1. Preheat your oven to 400°F. Lightly grease a 13″x9″ baking dish with vegetable oil. Heat 1 Tbsp oil in a large skillet over medium-high heat. Add the chopped onion, bell pepper, and Badass Burger Booster. Cook, stirring occasionally, for about 7 minutes until softened. Add garlic and continue to cook for about 1 more minute until fragrant.
  2. Stir in the ground beef, seasoning with salt and pepper. Cook, breaking the meat up with a wooden spoon, for about 6 minutes until the beef is browned and no longer pink. Drain any excess fat. Add chili powder, flour, and cumin. Stir and cook for 1 minute, then pour in the beans, salsa, and 1/4 cup of water. Scrape the bottom of the skillet to release any browned bits, and cook for 2-3 minutes until everything is combined and heated through. Remove from the heat.
  3. Spread a small amount of the beef mixture on the bottom of your prepared baking dish. Layer with two tortillas, followed by a quarter of the shredded cheddar and pepper Jack cheeses. Top with half of the creamed corn and half of the beef mixture. Repeat with another layer of two tortillas, another quarter of cheese, the remaining creamed corn, and the remaining beef mixture. Finish with the last two tortillas, and top with the remaining cheddar and pepper Jack cheese.
  4. Bake the dish for about 30 minutes, or until the cheese has melted and the filling is bubbling. Remove from the oven and let it rest for 10 minutes before serving. Top with sour cream, fresh chopped onions, diced tomatoes, and cilantro. Enjoy!
