Honey Roasted Cabbage Wedges: Sweet, Savory, and Perfectly Caramelized

Cabbage is one of those vegetables that often hides in the background, but with the right touch it can easily take center stage. Roasting it at high heat works its magic, caramelizing the edges and softening the core into something sweet, tender, and deeply satisfying. Add honey into the mix, and those natural sugars intensify, creating golden, sticky edges that make every bite irresistible.

Honey roasted cabbage wedges are proof that simple ingredients can be transformed into a show-stopping dish. The wedge cut feels substantial, giving each serving a hearty presence on the plate. The outside chars slightly while the inside becomes silky and mellow, and the drizzle of honey balances savory seasoning with a hint of sweetness that keeps you coming back for more.

The flavor combination is straightforward but delivers layers of comfort and elegance. A touch of garlic or onion powder brings depth, while olive oil ensures crispness. The honey, brushed on as the wedges roast, caramelizes into glossy edges that feel both rustic and indulgent. Finish them off with a squeeze of lemon or a splash of apple cider vinegar and you get that perfect balance of sweet, smoky, and bright.

These cabbage wedges are endlessly versatile. Serve them alongside roasted meats for a comforting dinner, pair them with grains and legumes for a satisfying vegetarian meal, or dress them up with toasted nuts, fresh herbs, or even a crumble of cheese when you want to impress. They’re hearty enough to be the star, but also a brilliant side dish that complements just about anything.

Honey roasted cabbage wedges remind us that vegetables don’t have to be complicated to feel special. With a hot oven, a drizzle of honey, and a little seasoning, cabbage transforms into a dish that’s wholesome, flavorful, and a perfect way to fill half your plate with something delicious.

  • Author: Johanne Bosse
  • Yield: Serves 4

Ingredients

Scale
  • 1 large green cabbage, cut into 8 wedges (core intact)
  • 3 tbsp olive oil
  • 2 tbsp honey
  • 1 tsp garlic powder
  • 1 tsp mustard (Dijon or grainy)
  • 1 tbsp Badass Burger Booster
  • 1/2 tsp sea salt, plus more to finish
  • Freshly ground black pepper, to taste

Instructions

  1. Preheat the Oven
Heat oven to 400°F (200°C). Line a large baking sheet with tinfoil for easy cleanup.

  2. Make the Honey Braise Mix
In a small bowl, whisk together the olive oil, honey, mustard, garlic powder, salt, and Badass Burger Booster until smooth and well combined.

  3. Prep the Cabbage Wedges
Place cabbage wedges on the prepared baking sheet. Brush half of the honey mixture over the wedges, coating the cut sides well.

  4. Roast and Braise
Roast in the preheated oven for 20 minutes. Carefully flip the wedges, brush with more of the honey mixture, and continue roasting for another 15–20 minutes, until the edges are caramelized and the centers are tender.

  5. Finish with Flavor
Remove from the oven and season with a little extra salt and freshly ground pepper. Drizzle over the remaining honey mixture while the wedges are hot for a glossy, flavorful finish.

  6. Serve
Enjoy as a side dish to roasted meats, grilled fish, or as a hearty plant-based centerpiece.
