Ingredients

For the Meatballs

  • 1 lb ground turkey

  • 1/4 cup breadcrumbs

  • 1 large egg

  • 2 cloves garlic, finely minced

  • 1/4 cup red onion, finely chopped

  • 1/4 cup feta cheese, crumbled

  • 1 tbsp chopped fresh parsley

  • 1 tbsp chopped fresh dill

  • 1 tsp dried oregano

  • 1/2 tsp ground cumin

  • Salt and pepper to taste

For the Bowl Base

  • 2 cups cooked basmati rice

  • 1 cup cherry tomatoes, halved

  • 1 cup cucumber, thinly sliced

  • 1/2 cup red onion, thinly sliced or julienned

To Finish

  • 1/4 cup crumbled feta cheese

  • Tzatziki sauce, to taste

  • Hummus, to taste

  • Olive oil, for drizzling

  • Lemon wedges, optional for serving


Instructions

  • Make the Meatballs:
    In a mixing bowl, combine the ground turkey with breadcrumbs, egg, garlic, red onion, herbs, feta, and spices. Mix until everything is well incorporated, being careful not to overwork the mixture. Roll into meatballs, about 1.5 inches in size.

  • Cook the Meatballs:
    Heat a drizzle of olive oil in a skillet over medium heat. Add the meatballs and cook for 8–10 minutes, turning occasionally until evenly browned and fully cooked through. Prefer baking? Place them on a lined baking sheet and bake at 400°F (200°C) for about 20 minutes, flipping halfway through.

  • Build the Bowls:
    Start with a base of fluffy basmati rice in each bowl. Arrange the cherry tomatoes, cucumber slices, and red onion over the top, leaving room for the meatballs.

  • Top and Serve:
    Add a generous portion of turkey meatballs to each bowl. Spoon over some creamy tzatziki and a dollop of hummus. Sprinkle with extra feta and finish with a drizzle of good-quality olive oil. A wedge of lemon on the side adds a zesty finishing touch.
