Ingredients

  • Juice of 1 lime
  • 1/2 tsp salt
  • 1 tbsp olive oil

 

  • 1 ripe avocado, diced
  • 1 small cucumber, peeled and thinly sliced
  • 1 small red bell pepper, finely diced
  • 1/4 cup red onion, finely diced
  • 2 tablespoons fresh lemon juice
  • 2 tablespoons fresh lime juice
  • 1 tablespoon olive oil
  • 1 teaspoon honey or maple syrup
  • 1 tablespoon fresh basil, chopped
  • 1 tablespoon fresh mint, chopped
  • Salt and pepper to taste
  • Mixed greens or arugula for serving

Instructions

Prepare the Scallops

  1. Slice the scallops into thin rounds, about 1/4 inch thick. If you prefer, you can also cut them into small, bite-sized pieces, toss with lime juice, salt, and olive oil, set aside.
  2. Arrange the scallop slices on a plate and lightly season with salt and pepper.
