Celebrating Island Traditions at Clammin’ & Jammin’ with Clam Salad Delight

It’s been an honor for us to be a part of this event year after year, sharing culinary creations that speak to the beauty and flavors of our local ingredients.

This year, we’re proud to feature our Clammin’ & Jammin’ Clam Salad, a refreshing dish designed to capture the essence of bar clams, an iconic part of PEI’s seafood culture. Bar clams, often considered one of the Island’s hidden treasures, offer a rich and briny flavor that perfectly balances with the fresh and zesty ingredients in this salad. Their succulent texture makes them the ideal centerpiece for a dish that brings the community together during the fall festival season.

Clammin’ and Jammin” Citrus Clam Salad

Ingredients

Units Scale
  • 1 lb bar clams, meat removed and chopped
  • 1/2 jalapeno pepper finely diced
  • 24 cherry tomato, diced
  • 1 cup diced cucumber
  • 12 Snow peas, cut on the bias
  • 1/2 cup julienned red onion
  • 2 oz olive oil
  • 1/4 cup white wine vinegar
  • Juice of 4 limes
  • Juice of 2 lemon
  • 1 tsp Badass Burger Booster
  • 1 tsp Hot Under the Kilt Acadian Cajun seasoning
  • 1/2 tsp coarse sea salt
  • 1/4 tsp black pepper
  • 2 oz crumbled feta
  • 1 oz jalapeno pepper jelly

 


Instructions

  1. Place all ingredients except for the jalapeno pepper jelly and feta, gently fold together, refrigerate and  marinate for one hour.
  2. Serve chilled with a jalapeno pepper jelly and crumble feta on the side.
