- 1 lb bar clams, meat removed and chopped
- 1/2 jalapeno pepper finely diced
- 24 cherry tomato, diced
- 1 cup diced cucumber
- 12 Snow peas, cut on the bias
- 1/2 cup julienned red onion
- 2 oz olive oil
- 1/4 cup white wine vinegar
- Juice of 4 limes
- Juice of 2 lemon
- 1 tsp Badass Burger Booster
- 1 tsp Hot Under the Kilt Acadian Cajun seasoning
- 1/2 tsp coarse sea salt
- 1/4 tsp black pepper
- 2 oz crumbled feta
- 1 oz jalapeno pepper jelly
Instructions
- Place all ingredients except for the jalapeno pepper jelly and feta, gently fold together, refrigerate and marinate for one hour.
- Serve chilled with a jalapeno pepper jelly and crumble feta on the side.
