Chicken and Waffles with a Coffee Infused Maple Syrup
Chicken and waffles are usually made with chicken that has been breaded and deep fried, this version elevates the dish by using tender thighs smothered in a delicious coffee infused maple sauce and adding wild blueberries to the waffles. Perfect for a special brunch date!

Chicken with Coffee Infused Maple Syrup
- 1 tbsp butter
- 8 oz button mushrooms, cleaned and roughly chopped
- 6 chicken thighs, cooked and chopped
- 3 green onions
- 1/2 cup Maplecure Coffee Infused Maple Syrup
- 1/4 cup 35% cream
- 1/2 cup marbled cheddar cheese
Blueberry Waffles
- 2 cups flour
- 1 tsp salt
- 1 tbsp baking powder
- 2 tbsp sugar
- 2 large eggs
- 1 1/2 cup buttermilk
- 1/3 cup melted butter
- 1 tsp vanilla
- 1 cup frozen wild blueberries
Instructions
- Melt the butter in a sauté pan.
- Add the mushrooms, chicken and green onions and cook until warmed through.
- Add the Coffee Infused Maple syrup and bring to a boil. Reduce by a third.
- Add the cream and heat through, add the cheese and allow to melt.
- Turn the heat to low and prepare the waffles.
Blueberry Buttermilk Waffles
- Place the flour, salt, baking soda and sugar in a bowl.
- In another bowl beat the eggs and add the buttermilk and butter. Beat until smooth.
- Add the wet ingredients to the dry and beat until the batter is smooth.
- Mix in the wild blueberries.
- Spray a waffle iron and add the batter, cook until crispy.
- To serve top a waffle with the sauce and finish with another drizzle of coffee infused maple.
