Radish and Cucumber Salad with Citrus Dressing

  • 12 radishes, sliced thinly on a mandolin
  • 1 English cucumber, sliced thinly on a mandolin
  • 1 jalapeno pepper, sliced thinly on the mandolin
  • 3 green onions, sliced
  • 2 tbsp sour cream
  • 2 tbsp white wine vinegar
  • 1/2 grapefruit, juiced
  • 1/2 orange, juiced
  • 1 lemon, juiced
  • 1 lime, juiced
  • 1/2 tsp salt
  • 1/4 tsp pepper
  • 1/4 tsp chili flakes
  • 1/2 cup smoked almonds

Instructions

  1. Place the radishes, cucumber, jalapeno and green onions in a bowl. set aside.
  2. Place the sour cream, white wine vinegar, citrus, salt and pepper in a bowl and whisk well.
  3. pour the dressing over the salad and toss.
  4. Finish with the chili flakes and smoked almonds.
