Beef Fajitas
Beef Fajitas are a quick 30 minute go to meal for us, we usually use a boneless cut of beef for this but we also make them if we have left over beef in the fridge such as roast left from Sunday dinner, left over steak from a BBQ the night before and we have even used left over chicken or pork. No need to change the recipe if you change the protein. Serve these fajitas with your toppings of choice, we like salsa, sour cream, hot sauce, guacamole, cheddar and hot sauce, you could even add some cooked rice for a heartier meal.

Ingredients

- 1/4 cup olive oil
- 1 clove garlic, minced
- 1 lb beef cut into strips
- 2 medium yellow onions, julienned
- 1 red pepper, julliened
- 1 yellow pepper, julienned
- 2 tsp dried cumin
- 2 tsp dried coriander
- 6 soft tortilla shells
- Suggested toppings; salsa, sour cream, guacamole, hot sauce, cheddar cheese.
Instructions
- Heat the olive oil in a large skillet.
- Add the garlic and cook until it turns golden. Remove the garlic with a slotted spoon and discard.
- Season the beef with salt and pepper.
- Sear the beef until it is medium rare. remove from the pan and set aside.
- Add the onions and peppers, sprinkle with the cumin and coriander. Cook until soft.
- Add the beef back into the pan and warm through.
- Wrap the tortillas in a damp dish towel and microwave for 1-2 minutes.
- To assemble place salsa, sour cream and guacamole on the the tortilla, add the beef mixture, top with the cheese and hot sauce.
- Roll the tortilla away from you, tucking in the ends as you go.
