Ceviche is a dish in which raw fish is marinated in citrus. In North America it is most common to find ceviche made with scallops. The traditional flavors of ceviche pair beautifully with apples to make it a vegetarian dish.
4 apples cubed (I like to mix it with 4 different apple varieties)
¼ med sliced red onions thin
2 green onion tails sliced on the bias
1 tsp. coarse sea salt
1 tsp. milled pepper
1 hot chili pepper seeds removed and finally diced
4 tbsp. cilantro chopped
Juice of 4 lime
½ cup Bloo Juice
½ cup roasted almonds whole
In a large bowl incorporate the Apples with the red onions and green onions, add the salt, pepper, chili, bloo juice and cilantro, toss lightly and refrigerate. Just before service add the lime juice and lightly mix. Place on a plate or in a martini glass and gently mound the ceviche.
