The Soupbox Cookbook
Jamie Taerbaum and Dru Melton
I know I'm not the only one in my circle who absolutely loves homemade soups but I'm wondering if I'm the only one who loves them year round? How does the prospect of a hot bowl of soup in August make you feel? Personally I love soup no matter what the season or temperature, and while soups in our house are used often as a great way to clean up the fridge I love riffing on other peoples recipes as well.
Chicago is home to a well known restaurant called the Soupbox and head chef Dru Melton has teamed up with Soupbox owner Jamie Taerbaum to offer a selection of the top 125 soups that they prepare. Many are featured because they are best sellers but some made the list for their spicy and daring ingredients! Most can be prepped in under 25 minutes.
Some of the soups on my "to try" list are the Deep South Bergoo which features both lamb and beef, the Summer's Bounty Green Been Soup with Quinoa, and Cantonese Chicken Chowder.
