  • 4 salmon fillets (6 oz each)
  • 2 tablespoons olive oil
  • 1 teaspoon garlic powder
  • 1 teaspoon smoked paprika
  • Salt and pepper to taste
  • 2 ripe avocados, diced
  • 1 small red onion, finely chopped
  • 1 jalapeño, seeded and finely chopped (optional)
  • 2 tablespoons fresh cilantro, chopped
  • 2 limes (1 for zest and juice, 1 for serving)
  • Lime wedges (for serving)

 


Instructions

Instructions:

  1. Prepare the Salmon;
  2. Preheat your grill to medium-high heat.
  3. In a small bowl, mix the olive oil, garlic powder, smoked paprika, salt, and pepper.
  4. Brush the salmon fillets with the olive oil mixture on both sides.
  5. Grill the Salmon:
  6. Place the salmon fillets on the preheated grill, skin-side down.
  7. Grill for about 4-5 minutes per side, or until the salmon is cooked through and has nice grill marks. The internal temperature should reach 145°F (63°C).
  8. Prepare the Avocado Topping
  9. In a medium bowl, combine the diced avocados, finely chopped red onion, jalapeño (if using), chopped cilantro, the zest and juice of 1 lime, salt, and pepper to taste.
  10. Gently mix to combine all the ingredients.
  11. Assemble and Serve:
  12. Once the salmon is grilled, transfer the fillets to a serving platter.
  13. Spoon the avocado topping generously over each salmon fillet.
  14. Serve immediately with lime wedges on the side for an extra squeeze of fresh lime juice.
