Chicken, Cranberry and Brie Panini
Craving the flavors of your favorite meal without all the hassle? We’ve got you! No dressing you say? No worries say we! We’re whipping up a quick 10 minute cheater dressing! Hint: omit the chicken and use this dressing recipe with a rotisserie chicken for a super quick meal; winner, winner chicken dinner!

Chicken, Cranberry and Brie Panini

- 2 tablespoons olive oil
- 2 sticks of celery, small dice
- 1 medium onion, small dice
- 1 1/2 cups cubed bread
- 1 tbsp summer savory
- 1 tsp salt
- 1/2 tsp pepper
- 1 cup chicken broth
- 1/2 can cranberry sauce
- 1 1/2 cups leftover chicken
- 8 slices artisan bread of your choice
- 1/2 can cranberry sauce
- 1 small wheel of Brie
- 1 Apple sliced
Instructions
- Place the olive oil in a sauté pan and heat until it begins to shimmer.
- Sauté the celery and onion until soft.
- Add the bread, the summer savory, salt and pepper and stir to combine.
- Mix in the broth, followed by the cranberry sauce and the diced chicken. Cook the dressing until all the liquid is absorbed and there is no longer any wetness.
- Place four slices of bread out in front of you, divide the remaining cranberry sauce between them.
- Slice the Brie and add a generous portion to each slice of bread, do the same with the apple.
- Divide the dressing into fourths and add to the sandwich, top with the remaining bread.
- Butter both sides and grill in the panini press or frying pan until golden brown.
