Village Greek Salad

Ingredients

  • 1 green pepper, chopped
  • 12 Cherry Tomato’s, halved
  • 1 English Cucumber, cubed
  • 1/2 red onion, jullienned
  • 12 to 16 Kalamata black olives
  • 1/2 cup crumbled feta cheese
  • 1/4 cup white wine vinegar
  • 1/2 cup extra virgin olive oil
  • juice of 1/2 lemon
  • 2 clove garlic, minced
  • 1 tbsp dried oregano
  • 1 1/2 tsp dried basil
  • 1 tsp coarse sea salt
  • 1/2 tsp black pepper

Instructions

  1. In a large serving bowl, toss peppers, tomatoes, cucumbers, onions, & black olives.
  2. In a mason jar, mix olive oil, white wine vinegar, lemon, garlic, oregano, basil, salt and pepper. Shake well.
  3. Pour the dressing over the salad and mix well.
  4. Finish salad with the crumbled feta, then give it a final toss and refrigerate for 1 hour.
  5. Gently re toss and serve.
