- 1 lb fresh ground turkey meat
- 1 small red onion, grated
- 2 cloves garlic, minced
- 1 cup chopped parsley
- 10 mint leaves, chopped
- 2 tsp oregano
- 2 tsp cumin
- 1/2 tsp cayenne pepper
- 1 tsp salt
- 1/2 tsp pepper
- 2 tbsp olive oil, divided
- 4 flour tortillas
- finely diced Cucumber
- finely diced tomatoes
- Chopped black olives
- Homemade tzatziki sauce
- Feta cheese
Instructions
- In a bowl combine the ground turkey with the red onion, garlic, parsley, mint, oregano, cumin, cayenne pepper, salt, pepper and 1 tbsp of olive oil, mix well to combine.
- Form the turkey into 4 portions.
- Place one portion of turkey in the center of each tortilla, flatten until the entire surface of the tortilla is evenly covered.
- Heat the remaining tbsp of olive oil in a skillet or on a grill, place the tortilla in the pan with the ground turkey down, cook for 8-10 minutes, flip the tortilla and cook until the tortilla becomes crispy.
- remove from the pan and add the cucumbers, tomatoes, and olives, top with the tzatziki sauce and feta cheese.
