Tony’s Smoked Chops with Pineapple Salsa

Ingredients

  • 2 Tony’s Meats Smoked Chops
  • Olive oil
  • 1/2 cup Pineapple cut into 1/4 inch squares
  • 1/4 cup wild blueberries
  • 1/4 cup red onion, finely diced
  • 1 jalapeno, deseeded, minced
  • 2 tbsp chopped cilantro
  • 2 tbso olive oil
  • 1/2 tsp salt
  • juice of 1/2 lemon
  • juice of 1/2 lime

Instructions

  1. Preheat grill to 350
  2. Rub the chops with the olive oil and grill until an internal temperature of 165 is reached.
  3. Combine the remining ingredients into a bowl and mix well, refrigerate until needed.
  4. Once the chops have cooked serve with a generous portion of the pineapple salsa.
