- 1 lb scallops, dried with bits removed
- 1/2 cup bread crumbs
- 3 tbsp garlic butter, melted (our recipe here)
- 2 tbsp chopped fresh parsley
- 1/4 tsp salt
- 1/4 tsp pepper
- 1 ounce parmesan cheese, grated
Instructions
- Preheat oven to broil.
- Toss the scallops in the breadcrumbs.
- Place garlic butter in the base of a casserole dish ( you may use 1 or if you prefer make 2 personal servings)
- Place the scallops in the dish, toss with the herbs and add salt and pepper.
- Top with the grated parmesan cheese.
- Place under the broiler and broil just until the cheese has melted and the scallops are cooked through, about 8 minutes.
