Scallop au Gratin

Ingredients

  • 1 lb scallops, dried with bits removed
  • 1/2 cup bread crumbs
  • 3 tbsp garlic butter, melted (our recipe here)
  • 2 tbsp chopped fresh parsley
  • 1/4 tsp salt
  • 1/4 tsp pepper
  • 1 ounce parmesan cheese, grated

Instructions

  1. Preheat oven to broil.
  2. Toss the scallops in the breadcrumbs.
  3. Place garlic butter in the base of a casserole dish ( you may use 1 or if you prefer make 2 personal servings)
  4. Place the scallops in the dish, toss with the herbs and add salt and pepper.
  5. Top with the grated parmesan cheese.
  6. Place under the broiler and broil just until the cheese has melted and the scallops are cooked through, about 8 minutes.
