BBQ Breakfast Hash

Ingredients

Units Scale
  • 8 Tony’s breakfast sausages
  • 3 tbsp butter
  • 2 cups baby potatoes, cooked (or parboiled), cut in fourths
  • 1 cup red pepper, diced
  • 1 cup yellow pepper, diced
  • 6 green onions, sliced
  • 1 tbsp Badass Burger Booster
  • 1 tsp pepper
  • 4 eggs Sunnyside up, or, cooked to your liking
  • 3 tbsp chopped chives

Instructions

  1. Grill the sausages on the BBQ or in a cast iron pan, once cooked, remove and set aside.
  2. Melt the butter in a cast iron skillet.
  3. Add the potatoes, peppers, green onions, Badass Burger Booster and pepper. Sauté until the potatoes begin to get crispy.
  4. Cut the sausages into bite sized pieces and add to the hash, heat to warm through.
  5. Spoon the hash into bowls and top with an egg, garnish with fresh chives.
