- 8 Tony’s breakfast sausages
- 3 tbsp butter
- 2 cups baby potatoes, cooked (or parboiled), cut in fourths
- 1 cup red pepper, diced
- 1 cup yellow pepper, diced
- 6 green onions, sliced
- 1 tbsp Badass Burger Booster
- 1 tsp pepper
- 4 eggs Sunnyside up, or, cooked to your liking
- 3 tbsp chopped chives
Instructions
- Grill the sausages on the BBQ or in a cast iron pan, once cooked, remove and set aside.
- Melt the butter in a cast iron skillet.
- Add the potatoes, peppers, green onions, Badass Burger Booster and pepper. Sauté until the potatoes begin to get crispy.
- Cut the sausages into bite sized pieces and add to the hash, heat to warm through.
- Spoon the hash into bowls and top with an egg, garnish with fresh chives.
