Lobster Fried Rice

Ingredients

Units Scale
  • 2 tsp of sesame oil
  • 1/4 of a red onion very finely diced
  • 1/2 of a large carrot finely diced
  • 2 mini peppers finely diced
  • 1 lb of lobster pieces
  • 1 egg slightly beaten
  • 1 tsp fresh dill ( optional)
  • Salt and pepper to taste
  • 1 cup frozen peas
  • 2 cups hot cooked white long grain rice
  • 1 tbsp fresh lime juice ( optional)
  • 1/4 cup soya sauce
  • 2 green onions chopped

Instructions

  1. Place the sesame oil into a large skillet and heat until very hot, the oil will start to shimmer.
  2. Add the onions carrots and peppers and saute for 2 to 3 minutes.
  3. Add the lobster meat and cook until warmed through.
  4. Push the lobster meat and vegetables to the side and add the egg stirring quickly, once the egg has reached a scrambled consistency stir in with the vegetable and lobster meat.
  5. Add the salt and pepper along with the dill if using, add the peas and the hot rice and stir to combine, add the lime juice and a quarter cup of soya sauce.
  6. Taste and adjust salt pepper and soy sauce to liking.
  7. Top with green onion and serve.
