- 1/2 pound cooked lobster meat, chopped into bite-sized pieces
- 1 tablespoon fresh lemon juice
- 2 tablespoons extra virgin olive oil
- 1 tablespoon fresh chives, finely chopped
- 1 tablespoon fresh parsley, finely chopped
- 1/2 teaspoon Dijon mustard
- Salt and pepper to taste
- 1 baguette, sliced into 1/2-inch rounds
- 1 garlic clove, peeled (for rubbing on the crostini)
- 1/4 cup crème fraîche
- Additional chopped chives or parsley for garnish (optional)
Instructions
- Prepare the Crostini:
- Preheat your oven to 400°F (200°C).
- Arrange the baguette slices on a baking sheet and brush lightly with olive oil.
- Toast in the oven for 5-7 minutes, or until golden brown and crispy.
- Remove from the oven and rub each slice with the cut garlic clove while still warm.
- Prepare the Lobster Mixture:
- In a bowl, combine the chopped lobster meat with fresh lemon juice, olive oil, Dijon mustard, chives, and parsley.
