Lemon Coconut Energy Bites

Ingredients

  • 1 cup pitted dates
  • 1 cup roasted, unsalted cashews
  • 1/2 cup unsweetened shredded coconut ( more for rolling if desired)
  • Zest and juice of 1 large lemon
  • pinch of salt

Instructions

  1. Place all of the ingredients into the bowl of a food processor, pulse until a dough forms.
  2. roll the dough into 12 balls and then roll in additional coconut if desired.
  3. Store in the refrigerator for up to 2 weeks or in the freezer for up to 3 months.
