- 1 cup pitted dates
- 1 cup roasted, unsalted cashews
- 1/2 cup unsweetened shredded coconut ( more for rolling if desired)
- Zest and juice of 1 large lemon
- pinch of salt
Instructions
- Place all of the ingredients into the bowl of a food processor, pulse until a dough forms.
- roll the dough into 12 balls and then roll in additional coconut if desired.
- Store in the refrigerator for up to 2 weeks or in the freezer for up to 3 months.
