- 2 tbsp olive oil
- 2 lbs ground lamb
- 1 yellow onion, diced
- 1 1/2 cups cracked wheat, soaked in water for 1 hour
- 1 tsp salt
- 1/2 tsp pepper
- 1 tsp all spice
- 1 tsp cinnamon
- 1/4 tsp nutmeg
- preheat oven to 400. Grease an 8X8 pan with the olive oil.
- Drain the cracked wheat and combine it along with the other ingredients in a bowl, mix well.
- Place in the prepared pan and bake for 45-50 hour.
- Serve with tzatziki sauce or any sauce of choice.
Fatayre
- Pizza Dough (or favorite dough of choice)
- 2 tbsp olive oil
- 16 ounces spinach
- 1 onion diced
- 1/2 cup pine nuts
- 1/2 tsp all spice
- 3 ounces crumbles feta
- Preheat oven to 400.
- Place the olive oil in a large saute pan and heat, add the spinach, and onion, cover and cook until the spinach is wilted, add the pine nuts, saute for 3 – minutes.
- Remove from heat and fold in the feta.
- Roll the dough into thin 4″ rounds.
- Place a tbsp of spinach in the center, fold the dough into a triangle around the filling. See Photos.
- Bake for 20 minutes or until golden brown.
