- 1 box of jumbo pasta shells, cooked 1 minute less than stated on the box
- 1/4 cup goat cheese
- 1/2 cup feta
- Zest of one lime
- Juice of half a lime
- 2 tbsp olive oil
- 1 tbsp fresh dill, chopped
- 1 tbsp fresh chives, chopped
- 1 tsp Hot Under The Kilt Acadian Cajun seasoning
- 2 tbsp fresh parmesan cheese, grated
- 8oz snow crab meat
Instructions
- Preheat the oven to broil.
- In a medium size bowl combine the goat cheese, feta, lime zest and juice, olive oil, herbs and seasoning, mix well.
- Gently fold in the crab meat.
- Stuff your shells one by one and place on a lightly oiled baking pan and then drizzle with a bit more of olive oil .
- Top with the grated parmesan cheese and place under the broiler for 5 minutes.
