Bulwark Blush Marinated Grilled Atlantic Salmon with a Fresh Apple Cider Salad

Ingredients

  • 4 Atlantic Salmon filets
  • 1/4 cup olive oil
  • 3/4 can Bulwark Blush non-alcoholic Cider
  • 2 sprigs of thyme
  • 2 cloves chopped garlic
  • Juice of 1 lime
  • 1 tsp salt
  • 1 tsp pepper

 

  1. Place all of the marinade ingredients on a 9 X 13 baking pan.
  2. Set Atlantic salmon filets in the marinade and keep rotating until they are well coated. Keep doing so for 30 minutes or so, turning every 10 minutes.
  3. Remove the Atlantic salmon from the marinade and place onto a grill, cooking each side until golden.
  4. Place the marinade in a med size pot and bring to a boil, reduce to a simmer and cook until the liquid reduces by 2/3.
  5. drizzle the marinade over the Atlantic Salmon before serving.

Bulwark Blush Apple Cider Salad

  • 4 Honey Crisp apples cubed
  • 1/4 can Bulwark Blush non-alcoholic Cider
  • 1/2 cup roasted almonds whole
  • 1/4 med thinly sliced red onions
  • 1 tsp. coarse sea salt
  • 1 tsp. milled pepper
  • 1 hot chili pepper seeds removed and finally diced
  • 4 tbsp. cilantro chopped
  • Juice of 1 lime
  1. In a large bowl incorporate the apples with the red onions, tossing lightly to avoid breaking the apples, add the Bulwark Blush cider, salt, pepper, chili and cilantro, toss and refrigerate. Add the lime juice and lightly mix just before serving.
