- 4 firm apples
- 1 large Orange, cut in half
- 1/2 Red onion
- 1 small Fennel bulb
- 2 tbsp Sugar
- 2 tsp Caraway seeds
- 1/4 cup Apple cider vinegar
- 1 tsp salt
- 1/2 tsp Pepper
- 1 tbsp Chopped Fennel fronds
Instructions
- Slice the apples on a mandolin and then cut thinly into matchsticks. Squeeze the juice from ½ of the orange over the apple.
- Repeat the process with the red onion and fennel and add to the apples.
- Add the sugar, caraway seeds, cider vinegar, salt, pepper, fennel fronds and juice from the remaining orange, toss well and refrigerate for 30 minutes before serving.
