- 2 tbsp olive oil
- 1/4 cup red onion, diced
- 1 clove garlic, minced
- 4 oz. lobster meat
- 4 oz. whipping cream
- 6 cherry tomatoes, quartered
- 1 cup baby spinach
- 1 oz. parmesan cheese plus more for serving
- 1/2 tsp salt
- 1/4 tsp pepper
- 8 oz cooked pasta of choice
Instructions
- Place the olive oil in a sauté pan. Add the onions and garlic and cook until soft.
- Add the lobster meat, tomatoes, and pasta, heat through and let reduce slightly.
- Add cream and reduce by 1/2.
- Add the parmesan cheese, salt, pepper and spinach and let wilt.
