Turkey Stew

Ingredients

  • 1 tbsp olive oil
  • 1 medium onion, diced
  • 1 medium carrot, diced
  • 3 celery stalks, diced
  • 3 garlic cloves, minced
  • 2 tbsp dried oregano
  • 2 tbsp dried basil
  • 1 tsp chili pepper flakes
  • 1 tsp salt
  • 1/2 tsp pepper
  • 1 lb leftover turkey meat, diced
  • 1 tbsp flour
  • 1 lb potatoes, peeled and cut into cubes
  • 4 cups turkey stock ( substitute chicken stock)
  • 1/2 cup whipping cream
  • 2 cups spinach, chopped

Instructions

  1. heat the oil in a large pot, add the onion, carrot and celery, saute until the vegetables begin ot soften.
  2. Add the garlic and the seasonings and saute for another minute.
  3. Add the flour and cook for 2-3 minutes.
  4. Add the tukey , potatoes, and stock, bring to a boil then lower the heat and simmer for 20 minutes or until the potatoes are fork tender.
  5. Add the cream and spinach and simmer until the spinach wilts and the cream is hot.
