- 1 tbsp olive oil
- 1 medium onion, diced
- 1 medium carrot, diced
- 3 celery stalks, diced
- 3 garlic cloves, minced
- 2 tbsp dried oregano
- 2 tbsp dried basil
- 1 tsp chili pepper flakes
- 1 tsp salt
- 1/2 tsp pepper
- 1 lb leftover turkey meat, diced
- 1 tbsp flour
- 1 lb potatoes, peeled and cut into cubes
- 4 cups turkey stock ( substitute chicken stock)
- 1/2 cup whipping cream
- 2 cups spinach, chopped
Instructions
- heat the oil in a large pot, add the onion, carrot and celery, saute until the vegetables begin ot soften.
- Add the garlic and the seasonings and saute for another minute.
- Add the flour and cook for 2-3 minutes.
- Add the tukey , potatoes, and stock, bring to a boil then lower the heat and simmer for 20 minutes or until the potatoes are fork tender.
- Add the cream and spinach and simmer until the spinach wilts and the cream is hot.
