- 4 fillets of salmon, skin on
- 4 medium sweet potatoes, cooked and mashed
- 4 tbsp olive oil
- 2 tsp Hot Under The Kilt Acadian Cajun Seasoning
- 1 tbsp olive oil
- 1/2 cup chopped walnuts
- 1/2 cup maple syrup
- 1/4 cup chopped green onions
Instructions
- Preheat oven to 400 degrees.
- Place the salmon skillets skin side down on a parchment lined baking sheet.
- Drizzle each fillet with 1 tbsp olive oil.
- Divide the sweet potato into 4 portions and spread each evenly over each salmon fillet.
- Hea the remaining tbsp of olive oil and sautre the walnuts until they begin to turn golden, add the maple syrup and bring to a gentle simmer, turn off the heat, add in the green onions.
- Pour the mple mixture evenly over each salmon fillet.
- Bake for 15-20 minutes or until the salmon is no longer opaque.
