Sweet Potato Crusted Salmon

Ingredients

  • 4 fillets of salmon, skin on
  • 4 medium sweet potatoes, cooked and mashed
  • 4 tbsp olive oil
  • 2 tsp Hot Under The Kilt Acadian Cajun Seasoning
  • 1 tbsp olive oil
  • 1/2 cup chopped walnuts
  • 1/2 cup maple syrup
  • 1/4 cup chopped green onions

Instructions

  1. Preheat oven to 400 degrees.
  2. Place the salmon skillets skin side down on a parchment lined baking sheet.
  3. Drizzle each fillet with 1 tbsp olive oil.
  4. Divide the sweet potato into 4 portions and spread each evenly over each salmon fillet.
  5. Hea the remaining tbsp of olive oil and sautre the walnuts until they begin to turn golden, add the maple syrup and bring to a gentle simmer, turn off the heat, add in the green onions.
  6. Pour the mple mixture evenly over each salmon fillet.
  7. Bake for 15-20 minutes or until the salmon is no longer opaque.
