Sweet and Savory Cheddar Crinkle Cookies

Ingredients

  • 2 cups flour
  • 1 tsp baking powder
  • 1/4 tsp salt
  • 1/2 cup butter, room temperature
  • 2/3 cup white sugar
  • 2 eggs, room temperature
  • 2 tsp vanilla extract
  • 1 3/4 shredded cheddar cheese
  • 1/4 cup sugar
  • 1 cup icing sugar

Instructions

  1. Place all of the dry ingredients’ in a bowl and whisk to combine. Set aside.
  2. cream together the butter and sugar just until they come together, about 2 minutes.
  3. Mix in the eggs, vanilla.
  4. Fold in the cheddar.
  5. gradually add the flour in the three portions, mixing only to combine, the dough will be sticky.
  6. Chill the dough for 4 hours,
  7. Preheat the oven to 325
  8. Place the remaining sugar in one bowl and the icing sugar in another.
  9. Scoop the dough out in 1 tbsp portions, roll ( butter hands if need) roll the cookies in the sugar first, being very generous, this will prevent the icing sugar from being absorbed by the cookie, then roll in the icing sugar and place on a parchment lined baking sheet.
  10. Bake on the bottom rack for 13 minutes.
  11. Cool on the baking sheet then store in an air tight container.
