- 1 1/2 cups room temperature butter
- 2 cups white sugar
- 2 eggs
- 1/2 cup molasses
- 4 1/2 cups flour
- 4 tsp ground ginger
- 1 1/2 tsp cinnamon
- 1 tsp ground cloves
- 1/2 tsp ground nutmeg
- 1/2 tsp salt
- 2 tsp baking soda
- 1/2 cup chopped walnuts, finely chopped
- Raw sugar for rolling
Instructions
- Preheat the oven to 350.
- Line baking sheets with parchment paper.
- Place the butter and sugar into the bowl of a stand mixer, cream until light and fluffy, stopping to scrape down the sides of the bowl.
- Add the eggs one at a time and mix until just incorporated.
- Add in the molasses and mix to combine.
- In another bowl combine the flour, ginger, cinnamon, cloves, nutmeg, salt, and baking soda.
- Add the flour mixture to the mixer 1 cup at a time mixing just until combined.
- Remove the bowl from the mixer and fold in the walnuts.
- Using a two inch scoop divide the dough into portion, roll each portion into a ball and roll in the raw sugar, place on a baking sheet, these will spread quite a bit so limit it to 6 cookies per sheet.
- Bake for 14 minutes or until the top has crackled.
- Let cool on the baking sheet for 5 minutes before transferring to a wire rack.
