Snow Crab Linguini

Ingredients

  • 1/2 tbsp olive oil
  • 3 shallots, minced
  • 3 cloves garlic, minced
  • 1 tsp salt
  • 1/2 cup cherry tomatoes
  • 1/2 cup sliced mushrooms
  • 1/4 cup green onions, chopped
  • 1/2 cup grated parmesan cheese
  • 1/2 cup white wine
  • 1 tbsp lime juice
  • 8 ounces snow crab meat
  • 14 ounce cooked linguine
  • reserved pasta water

Instructions

  1. Heat olive oil in a large saute pan. Add the shallots, garlic, and salt. Cook over low heat until the shallots soften.
  2. Add the tomatoes, mushrooms and green onions and saute for 2 minutes.
  3. Deglaze the pan with the white wine and lime juice, add the parmesan cheese and cook for 5 minutes.
  4. Add the crab meat, heat through
  5. Toss with the linguini, add reserved pasta water as needed to make a smooth, silky sauce.
