- 1/2 tbsp olive oil
- 3 shallots, minced
- 3 cloves garlic, minced
- 1 tsp salt
- 1/2 cup cherry tomatoes
- 1/2 cup sliced mushrooms
- 1/4 cup green onions, chopped
- 1/2 cup grated parmesan cheese
- 1/2 cup white wine
- 1 tbsp lime juice
- 8 ounces snow crab meat
- 14 ounce cooked linguine
- reserved pasta water
Instructions
- Heat olive oil in a large saute pan. Add the shallots, garlic, and salt. Cook over low heat until the shallots soften.
- Add the tomatoes, mushrooms and green onions and saute for 2 minutes.
- Deglaze the pan with the white wine and lime juice, add the parmesan cheese and cook for 5 minutes.
- Add the crab meat, heat through
- Toss with the linguini, add reserved pasta water as needed to make a smooth, silky sauce.
