Salad

  • 2 cups fresh strawberries, hulled and sliced
  • 1 cup fresh raspberries
  • 1 cup fresh blueberries
  • 1 cup frozen cranberries, thawed
  • 1/4 cup chopped fresh mint leaves
  • 1/4 cup chopped pecans
  • 1/2 cup crumbled feta
  • Mixed salad greens (such as spinach, arugula, or spring mix), washed and dried

Honey Citrus Vinaigrette

  • 1/4 cup extra virgin olive oil
  • 2 tablespoons apple cider vinegar
  • 1 tablespoon honey
  • 1 tablespoon fresh lime juice
  • 1 teaspoon lime zest
  • 1 teaspoon Dijon mustard

Instructions

  1. In a small bowl, whisk together the extra virgin olive oil, apple cider vinegar, honey, fresh lime juice, lime zest, Dijon mustard, and a pinch of salt and pepper until well combined.
  2. In a large mixing bowl, combine the strawberries, raspberries, blueberries, and cranberries.
  3. Add the chopped mint leaves and dressing to the bowl and gently toss to combine.
  4. Arrange a bed of mixed salad greens on a serving platter or individual salad plates.
  5. Spoon the mixed fruit mixture over the bed of salad greens, distributing it evenly.
  6. Garnish the salad with additional fresh mint leaves, chopped pecans and crumbled feta.
