- 6 4 1/2 ” flour tortillas
- 1/2 cup melted butter
- 1/2 cup sugar
- 1/2 cup graham wafer crumbs
- 3 Red Prince apples, medium dice
- 1 1/2 tbsp cinnamon
- 2 tbsp butter
- 1 tsp cinnamon
- 1 pinch cardamom
- 1 pinch ground ginger
- 1/2 cup maple syrup
- 1/2 cup whipping cream
- 1 tbsp maple syrup
- caramel sauce
Instructions
- Preheat oven to 400F.
- Place the melted butter in a shallow bowl.
- Place sugar, graham wafer crumbs and cinnamon in another shallow bowl and mix well.
- Dip a tortilla into the butter letting the excess drip off, then dip into the sugar mixture covering the tortillas completely.
- Turn a muffin tin upside down and place the tortillas between two cups, repeat with the remaining tortillas.
- Bake for 10 minutes, remove from the oven and let cool completely.
- Melt the remaining 2 tbsp of butter in a heavy skillet.
- Add the Red Prince apples, 1 tsp of cinnamon, cardamom, ginger and maple syrup. Bring to a boil, reduce to a simmer and cook until thick and syrupy.
- Whip together the whipping cream and the remaining tbsp of maple syrup. Set aside.
- Spoon the apple mixture into the tacos, top with the Maple whipped cream and drizzle with caramel sauce.
