Red Prince Apple Maple Taco

Ingredients

  • 6 4 1/2 ” flour tortillas
  • 1/2 cup melted butter
  • 1/2 cup sugar
  • 1/2 cup graham wafer crumbs
  • 3 Red Prince apples, medium dice
  • 1 1/2 tbsp cinnamon
  • 2 tbsp butter
  • 1 tsp cinnamon
  • 1 pinch cardamom
  • 1 pinch ground ginger
  • 1/2 cup maple syrup
  • 1/2 cup whipping cream
  • 1 tbsp maple syrup
  • caramel sauce

Instructions

  1. Preheat oven to 400F.
  2. Place the melted butter in a shallow bowl.
  3. Place sugar, graham wafer crumbs and cinnamon in another shallow bowl and mix well.
  4. Dip a tortilla into the butter letting the excess drip off, then dip into the sugar mixture covering the tortillas completely.
  5. Turn a muffin tin upside down and place the tortillas between two cups, repeat with the remaining tortillas.
  6. Bake for 10 minutes, remove from the oven and let cool completely.
  7. Melt the remaining 2 tbsp of butter in a heavy skillet.
  8. Add the Red Prince apples, 1 tsp of cinnamon, cardamom, ginger and maple syrup. Bring to a boil, reduce to a simmer and cook until thick and syrupy.
  9. Whip together the whipping cream and the remaining tbsp of maple syrup. Set aside.
  10. Spoon the apple mixture into the tacos, top with the Maple whipped cream and drizzle with caramel sauce.
