Pineapple Squares

Ingredients

Units Scale

Base

  • 1/2 cup butter, room temperature
  • 1/4 cup sugar
  • 1 1/4 cup sifted flour

Middle Layer

  • 1 14oz cans of crushed pineapple

Topping

  • 1/2 cup sugar
  • 1 egg, well beaten
  • 1 tbsp melted butter
  • 1 1/2 cup flaked sweetened coconut

Instructions

  1. Preheat oven to 350 and butter a 9 X 9 baking pan.
  2. Prepare the base; place the butter, sugar and flour into a mixing bowl and combine with a fork. Place into baking dish and use a fork to firmly pack the base. Bake for 15 minutes and allow to cool.
  3. Drain the pineapple very well and layer on top of the base.
  4. Place the topping ingredients into a mixing bowl and mix well. Spread evenly over the pineapple layer. return to the oven and bake for 25 minutes.. cool and cut.
