Base
- 1/2 cup butter, room temperature
- 1/4 cup sugar
- 1 1/4 cup sifted flour
Middle Layer
- 1 14oz cans of crushed pineapple
Topping
- 1/2 cup sugar
- 1 egg, well beaten
- 1 tbsp melted butter
- 1 1/2 cup flaked sweetened coconut
Instructions
- Preheat oven to 350 and butter a 9 X 9 baking pan.
- Prepare the base; place the butter, sugar and flour into a mixing bowl and combine with a fork. Place into baking dish and use a fork to firmly pack the base. Bake for 15 minutes and allow to cool.
- Drain the pineapple very well and layer on top of the base.
- Place the topping ingredients into a mixing bowl and mix well. Spread evenly over the pineapple layer. return to the oven and bake for 25 minutes.. cool and cut.
