- 2 cups quick cook minute oats
- 2 cups rice cereal
- 1 cup chunky peanut butter
- 1/2 cup honey
- 1/4 cup brown sugar
- 1/8th tsp salt
- 1 tsp vanilla extract
- 1/3 cup semisweet chocolate chips
- 1 tbsp coconut oil
Instructions
- Line an 8 X 8 pan with parchment paper, leaving an overhang and set aside.
- Combine the oats and rice crispies in a bowl and set aside.
- Add the peanut butter, honey, brown sugar and salt into a double boiler and melt, stirring until it’s well incorporated, stir in the vanilla.
- Combine the oat mixture with the peanut butter mixture and mix well.
- Place the mixture into the prepared pan, use a fork to firmly press down the mixture.
- Refrigerate for 1 hour.
- Once the bars have set combine the chocolate chips and coconut oil into a microwave bowl, heat for 60 seconds then stir to combine, drizzle the chocolate over the bars.
