Peanut Butter Bars

Ingredients

  • 2 cups quick cook minute oats
  • 2 cups rice cereal
  • 1 cup chunky peanut butter
  • 1/2 cup honey
  • 1/4 cup brown sugar
  • 1/8th tsp salt
  • 1 tsp vanilla extract
  • 1/3 cup semisweet chocolate chips
  • 1 tbsp coconut oil

Instructions

  1. Line an 8 X 8 pan with parchment paper, leaving an overhang and set aside.
  2. Combine the oats and rice crispies in a bowl and set aside.
  3. Add the peanut butter, honey, brown sugar and salt into a double boiler and melt, stirring until it’s well incorporated, stir in the vanilla.
  4. Combine the oat mixture with the peanut butter mixture and mix well.
  5. Place the mixture into the prepared pan, use a fork to firmly press down the mixture.
  6. Refrigerate for 1 hour.
  7. Once the bars have set combine the chocolate chips and coconut oil into a microwave bowl, heat for 60 seconds then stir to combine, drizzle the chocolate over the bars.
