Lamb Kofta
- 2 lbs ground lamb
- 1/2 yellow onion, minced
- 1 egg, lightly beaten
- 12 chopped chives
- 2 tbsp fresh chopped oregano
- 2 teaspoons cumin
- 2 tsp coriander
- 2 tsp salt
- 1/2 tsp pepper
Garlic Tahini Sauce
- 1/2 cup Greek yogurt
- 2 tbsp tahini
- 2 tbsp fresh squeezed lemon juice
- 2 cloves garlic, minced

- Place all of the garlic Tahini sauce into a bowl and mix well, refrigerate until needed.
- Pre-heat grill to 350 degrees.
- Cover 8 wooden skewers with water and set aside.
- Place all of the ingredients for the kofta into a bowl and mix until well combined.
- Divide the meat mixture into 8 portions and form into a ball.
- Take each portion of lamb and form in around the skewer, lengthen it until it is about 3″ long, compressing the meat tightly so that it doesn’t fall apart.
- Lightly brush the skewers with oil and place on the grill, cook on each side for 4-5 minutes, the internal temperature of the skewers should read 165. Do not over cook.
- Serve with garlic tahini sauce.
