Lamb Kofta with Garlic Tahini Sauce

Description

Lamb Kofta

  • 2 lbs ground lamb
  • 1/2 yellow onion, minced
  • 1 egg, lightly beaten
  • 12 chopped chives
  • 2 tbsp fresh chopped oregano
  • 2 teaspoons cumin
  • 2 tsp coriander
  • 2 tsp salt
  • 1/2 tsp pepper

Garlic Tahini Sauce

  • 1/2 cup Greek yogurt
  • 2 tbsp tahini
  • 2 tbsp fresh squeezed lemon juice
  • 2 cloves garlic, minced

Ingredients

  1. Place all of the garlic Tahini sauce into a bowl and mix well, refrigerate until needed.
  2. Pre-heat grill to 350 degrees.
  3. Cover 8 wooden skewers with water and set aside.
  4. Place all of the ingredients for the kofta into a bowl and mix until well combined.
  5. Divide the meat mixture into 8 portions and form into a ball.
  6. Take each portion of lamb and form in around the skewer, lengthen it until it is about 3″ long, compressing the meat tightly so that it doesn’t fall apart.
  7. Lightly brush the skewers with oil and place on the grill, cook on each side for 4-5 minutes, the internal temperature of the skewers should read 165. Do not over cook.
  8. Serve with garlic tahini sauce.
