- 18 baby yellow potatoes
- 1–2 tbsp olive oil
- 1/4 cup minced shallots
- 1/4 cup chopped cooked bacon
- 1/4 cup shredded cheddar cheese
- Sour cream and green onions for topping
Instructions
- Preheat oven to 400
- Cook the potatoes until fork tender, drain, place the potatoes on parchment paper and cool slightly.
- Use the base of a glass or a bowl to smash the potatoes.
- Drizzle with olive oil.
- Top with the shallots, half of the chopped bacon, cheese, and remining bacon.
- Bake for 20 minutes.
- Top with sour cream and green onions.
