Crispy Smashed Potatoes

Ingredients

  • 18 baby yellow potatoes
  • 12 tbsp olive oil
  • 1/4 cup minced shallots
  • 1/4 cup chopped cooked bacon
  • 1/4 cup shredded cheddar cheese
  • Sour cream and green onions for topping

Instructions

  1. Preheat oven to 400
  2. Cook the potatoes until fork tender, drain, place the potatoes on parchment paper and cool slightly.
  3. Use the base of a glass or a bowl to smash the potatoes.
  4. Drizzle with olive oil.
  5. Top with the shallots, half of the chopped bacon, cheese, and remining bacon.
  6. Bake for 20 minutes.
  7. Top with sour cream and green onions.
