Ingredients

  • 1 1/2 cups flour
  • 2 tsp baking powder
  • 1 tsp salt
  • 1 egg slightly beaten
  • 1 cup whole milk
  • 1/4 cup red pepper finely diced
  • 1/4 cup onions finely diced
  • 1 lb crab meat ( we used rock crab for its sweetness)

Instructions

  1. mix together flour, salt, and baking powder in a large bowl. make a well in the center and add egg and milk. whisk, making sure that no lumps remain.
  2. Mix in red pepper, onions and crab meat.
  3. heat a deep fryer to 360
  4. using a tablespoon carefully drop fritters into the hot oil.
  5. Cook until golden brown, about 5 minutes.
  6. remove with a slotted spoon and place on a paper towel.
  7. Serve with dill remoulade.
