- 3 tbsp butter
- 1/2 finely chopped red onions
- 2 cups corn niblets
- 3 tbsp flour
- 2 cups milk
- 2 cups cream
- 1 tbsp chopped dill
- 1 tsp dijon mustard
- 2 tsp Hot Under The Kilt Acadian Cajun seasoning
- 1/4 tsp salt
- 1/4 tsp black pepper
- 2 tbsp port
- 1/2 lb crab meat
- 1/2 lb lobster meat
- Squeeze of fresh lemon juice
Instructions
- Melt the butter in a heavy bottom pot.
- Add the onions, corn and flour and cook for 2-3 minutes, stirring continuously.
- Add the milk and cream and warm through.
- Stir in the mustard, the dill, the H.U.T.K, salt and pepper. Bring to a low boil, reduce to a simmer.
- Add the port, the crab and lobster, cook for an additional 7-8 minutes.
- Ladle into bowls and finish with a squeeze of fresh lemon juice.
