Ingredients

Units Scale
  • 2 ( 15.25) cans corn niblets
  • 1 ( 15 ounce) can black beans, rinsed and drained
  • 1/2 cup mayonnaise
  • 1/4 cup sour cream
  • 1 cup grated cheddar cheese
  • 1 cup grated mozzarella cheese
  • 1/2 cup grated parmesan cheese
  • 1 jalapeno, de seeded and minced
  • 8 sliced thick cut bacon, cooked and crumbled
  • 1 medium red onion, finely diced
  • Juice of 1 lime
  • 1 tsp Tajin seasoning
  • 1/2 tsp salt
  • 1/4 tsp pepper
  • green onion chopped for garnish

Instructions

  1. Combine all of the ingredients except for the green onions, into a large bowl, mix to combine. Top with the green onions. Serve with tortilla chips.
  2. Note: If desired reserve some bacon for garnish.
